Lunch time now has a 6 minute solution. These chia seed avocado toasts take 6 minutes to get from idea to plate. That, my friends, is the winning statement of the week.
And I know that is a seriously big deal for all you hearts and hustle types who don’t take enough time for lunch. Or dinner… or breakfast for that matter. But with these chia seed avocado toasts it’s a simple and quick solution to any meal of the day. Six minutes, guys. Come on, let’s get real. You know you try and weigh up if it’s faster to make lunch or hit a drive through and get something that you can eat while you hustle. I know this, because I’ve done this. But let’s try something new. Say it with me… I can invest six minutes on a super delicious and nutritious meal. That’s all you gotta commit to. That’s it. You got this avocado toast business nailed.

So, now that you’ve invested six minutes of the 1/2 hour lunch that you give yourselves, that either leaves you more time to hustle hard or play Pokemon Go. The choice is yours. Either way, your tummies will be full and satisfied. I haven’t fallen to the Pokemon Go phenomenon yet, but I have been known to be a late adopter of gaming trends!
Okay, back to the matter at hand. Super fast, super awesome avocado toasts. Get on it.
We can all find six minutes in a day to make sure that we’re nourishing our bodies right? Of course we can! If I can get my hot mess-ness together and get these avo toasts made for lunch then you can too. No more skipping meals. When you’ve got some simple ingredients, and six minutes, you’ve got lunch/ dinner/ breakfast. <- insert meal struggle here.
A few key things about poaching eggs.
- The water has got to have a tablespoon of vinegar- this helps to set the egg white and keeps them from going stringy.
- Use a whisk to gently stir the water to create a slight whirlpool at the centre of your pan.
- Crack the egg into a small bowl and add the egg to the water. Don’t crack the egg directly into the water.
- Set a 5 minute timer. -> Make sure you don’t overcook your eggs.
Chia Seed Avocado Toasts
- 2 slices multi-grain toast.
- 1 Tbsp butter
- 2 poached eggs
- 1 Tbsp white wine vinegar
- 3 radishes shaved
- 1 Tbsp Chia Seeds
- 1 avocado sliced
- 2 mediterranean style pickled artichokes
- 4 cherry tomatoes quartered
Boil 1.5 litres of water and add the vinegar.
Crack the egg into a small cup.
Use a whisk and gently swirl the water in the pan.
Tip the egg into the centre of the swirling water.
Cook the egg for 5 minutes.
Meanwhile, slice the tomatoes and avocado.
Toast the bread and butter.
Once the egg is cooked, gently drain it onto a kitchen towel to absorb any water.
Place the avocado on the toast. Top with the eggs, tomatoes, artichoke and chia seeds.
