I’m gonna go out on a limb and say if you happen to be living in the UK right now… you probably feel like you want a cocktail. And these Just Peachy ones are my way of saying “here, have some fresh and juicy peachy fizzy drinks to take your mind off it all.”

Let me just start by saying, this blog has never been political, nor will it ever be. Although food can be very political, it’s just not my style. You can check out Food Babe if you love your vegan rolls with a side of GMO debate. However, sometimes things happen that are just so big they can’t be ignored, and must be acknowledged. So here it goes…

Our little island nation is going through some seismic shifts right now, and we are kinda flying blind. This decision for the UK to leave the EU will have such far reaching repercussions that I’m not sure we comprehend right now. Would it be weird if I tried to tie this uncertainty back to these ultra fruity and juicy cocktails? Like, I feel like the whole country could probably benefit from sitting down to a super tall, cold glass of Just Peachy Champagne Spritzers. These cocktails could be the common ground where we start and we can keep talking from there.

How ’bout it Britain? You in?

We can all sit around my backyard and I can make you all peachy spritzer deliciousness and we can talk about it. We can chat about all of our hopes and dreams for the future. I imagine we’ll have a lot in common here. We can talk about how we’re more the same than different, and how we all thrive much better in certainty rather than upheaval. We can talk about how these spritzers are so easy to make that they only take about 5 minutes to pull together. And we can talk about how awesome those mini clothes pegs look with the little viola flower garnish. These spritzers are uber perfect for a patio party or a BBQ. Cause it’s summer and the time of the BBQ is upon us in full force people. Let’s get out there and soak up every ray of sunshine and hope!

So, before we all go away and talk about our hopes and dreams for the future over a just peachy spritzer, I need to tell you how to make these, and it does not involve making a sugar syrup. Because who in the world has the time to wait for that to cool down before you get peachy in a glass??? Not me. And I’m pretty sure not you.

Okay. Here we go. Ice in a glass. Pour in some smooth peach schnapp liquer. <- I used Aldi brand and same-same as the fancy stuff! This is a win-win situation for my wallet as I’m not a big drinker, so this bottle will probably sit in my freezer for the next 6 months. Unless of course Britain comes over and we chat. Then I’m gonna need lots more! Then add a splash (be generous) of ice wine, then top up with champagne or prosecco. Seriously. That’s it.
