Oh friends! Hi and wow. Have I ever got the cure for that mid day energy crash. These Protein packed Granola Bars are like little bites of energy. Literally. You can skip your store bought sugar loaded wanna be healthy treats. These granola bars are where it’s at. Packed with nuts and blueberries and all brought together with almond butter or peanut butter or any other nut butter for that matter.
So, let’s break it down.

These have been my go-to snack these past few weeks when I’m just trying to get through the afternoon without the aid of sugar-y coffee drinks or chocolate.
Sweet tooth satisfaction, packed with energy and without any of the sugar crash or extra calories. These are also healthy enough to act as a breakfast stand in for when you’re in a hurry to get out the door. <- That statement is me on a daily basis. Not sure how I manage it, but up at 5am daily and still late for work at 8am. Hmmm. Not sure if any of you are at that stage, but I know that we all have days where we dash out the door in a hurry, only to find ourselves making bad decisions to kill that hunger pang by mid morning. No Bake Protein Granola Bars
- 275 g rolled oats with oat bran flakes gluten free if needed
- 45 g shredded unsweetened coconut
- 135 g whole roasted mixed nuts roughly chopped
- 1 tablespoon chia seeds
- 2 Tablespoons pumpkin seeds
- 1 Tablespoon Linseeds
- 1/4 teaspoon salt
- 125 g peanut butter or almond butter I typically use almond butter
- 125 g honey
- 1 1/2 teaspoon vanilla
- 250 g fresh blueberries or 175g dried blueberries
In a sauce pan over medium heat melt the honey and almond butter together.
In a medium bowl combine all other ingredients.
Pour the honey and nut butter into the bowl and mix well.
Press the mix into a 9x9 square pan. Press firmly in or the bars will fall apart when you cut them.
Place in the freezer for about 30 minutes, or until the bars are firm enough to cut, but not frozen.
Remove from the pan and cut into bars.
If using fresh blueberries, store in the fridge. If using dried, store at room temperature in an airtight container.
