Guys… Spicy Turkey Lettuce Wraps. Let’s talk!
Do you feel that? That my friends is the thrill of yet another 30 minute meal rolling hot off the press and fresh on to your dinner table. Okay. So the obsession is clearly taking hold in a vice grip and not letting go.
Think about this:
Fresh crisp lettuce wrapped around a healthy spicy ground turkey mix drizzled with a sweet and spicy sauce, topped with crunchy salty peanuts, and fresh spring onions. <- Zero to dinner hero in 30 minutes.
The 30 minute meal obsession that is. I know there have been so many 30 minute extravaganzas out there, but I really think this concept still has a lot of legs. ‘Cause lets face it, time is becoming more scarce not less. As you rush home from work and think about all the house chores that need to get done. A dog who needs walking and feeding. Potentially kids who need feeding and possibly a side hustle that you can’t wait to get into.
So, you get home take a look in the fridge and realise you have some ground turkey and some lettuce. Maybe this lettuce is even left over from last week and isn’t feeling it’s freshest. <- It’s totally cool to admit this. You’re amongst friends here. We have all had the crisper drawer where good vegetables go to die.
Ok. Where was I? Right. Ground turkey, and last weeks lettuce. Rejoice folks. You’ve got dinner! The hint is in the recipe name:
Spicy Turkey Lettuce Wraps
- Spices… ✅
- Ground turkey… ✅
- Lettuce… last weeks or fresh… it’s cool with us… ✅
- Sauce… a super simple sauce consisting of cupboard staples… ✅✅
- Peanuts… this is totally optional… but so totally worth the effort of stopping by the gas station on the way home for some honey roasted peanuts.
- various garnishes… radishes, spring onion and some chillies…
I say stopping by the gas station because firstly they always have peanuts and secondly sometimes you just can’t face the 5pm rush of the grocery store.
Spicy Turkey Lettuce Wraps
- 500 g ground turkey
- 1 tsp Chinese 5 spice
- 1 Tbsp sesame oil
- 1 Tbsp Peanut butter smooth
- 2 Tbsp soy sauce
- 1/2 tsp fish sauce
- 1 Tbsp hoisin
- 1 tsp siracha chilli sauce available in the world foods section of most grocery stores
- 2 cups heads of baby gem lettuce. Taken down to the leaf so you have little lettuce .
- squeeze of lime juice to taste
In a medium frying pan over a medium heat add the sesame oil.
Add the turkey and the five spice and sauté until cooked and slightly golden.
Meanwhile in a medium bowl mix the remaining ingredients except the lettuce.
I don't add any extra salt to the sauce as it's usually perfectly seasoned due to the soy and peanut butter.
Whisk until smooth. Taste and adjust to your taste. Like more hoisin or more soy, or spice etc.
Pour half of the sauce to the turkey and cook for a further 2 minutes.
Fill the lettuce cups with the turkey mix.
Drizzle with the rest of the sauce and top with some crushed peanuts, chopped spring onions and some red chillies if you like super spicy.
